Bacon Kimchi Fried Rice
This recipe came to me when I just happened to have a slab of bacon and some kimchi in the fridge, and I saw a fried rice showdown on the food network. So I got a craving and went to work. The key to the recipe is the bacon. If you’ve got homemade bacon (on the blog next) fantastic. If not, the thicker the bacon the better. The texture is important. Thin bacon won’t due.
1 cup uncooked rice
3/4 lb uncooked bacon
1 smallish onion, diced.
1 bell pepper, diced
2 eggs, beaten
1-3 tbsp store bought chili garlic sauce depending on your spice level, or use sriracha if you don’t have any. But the jars of chili garlic sauce are better.
3 tbsp soy sauce
3/4 cup kimchi (recipe coming soon). Otherwise store bought, costco sometimes carries a yummy version.
Fully cook the rice in water in a separate pot. Meanwhile, slice the bacon into little pieces and brown them in a large pan. Next add the onion and bell pepper. Just let them cook in the bacon grease. After the bacon is done and the veges have softened up a bit turn the heat up to high and add the rice, mix it all together. Use a wood spoon to scrape the bottom as you go in case anything starts to stick. Add the chili garlic sauce, the soy sauce, and the kimchi. Continue to stir fry. Lastly, add the eggs and keep on mixing and “stir frying”. Once the eggs are cooked in turn off the heat and serve. It should have some heat, even if you didn’t use much of the chili garlic sauce. So enjoy with a nice dry lager or a mai tai or a mountain dew.
