Creamy Avocado Salsa
It’s not salsa verde. It’s not guacamole. It’s kind of what you’d get if you combine the two. If you order Al Pastor tacos at a Tijuana style taco shop it’s what’s going to come on top. It’s for when you want guacamole, but you also want salsa verde. You can’t have both after all, cuz that would be crazy. It’s also a good way to get a little more bang for your buck out of those expensive avocados from California if you live somewhere not in California, in which case you already have less access to the best Mexican food in the states, and so you’re already behind. Don’t fall too far behind.
I use it as a topping for tacos, nachos, etc. I don’t use it as a “chips and salsa” salsa. It works best as a condiment, not a dip. You can put it in a squeeze bottle and top your dishes off with it to add a little sex appeal. You always eat with your eyes first after all, unless you’re my dog, who would happily consume a severed head if he got one whiff of peanut butter from it.
What you’ll need -
• 1 medium avocado
• 4 tomatillos
• 1 bunch cilantro
• 1 serrano or jalapeno pepper - seeded and deveined
• half of a medium white onion
• salt to taste
• lime to taste
• ninja blender (or some other less cool blender)
Boil the tomatillos and the chili pepper for a few minutes until the tomatillos change color from bright green to more of an olive green. It’s when they get soft. Throw those items into the blender along with the cilantro, onion, and the avocado. Add a pinch of salt and a squeeze of lime. Blend, taste. You can also add a little water if you want to use it in a squeeze bottle and you need to thin it out just a touch. Add any salt or lime (or more chili pepper if it isn’t hot enough for you) to taste and blend again. Then put it in the fridge and cool it off before serving. If you’re saying to yourself, “wait a minute, this is basically just salsa verde with avocado” you’re pretty much right, so take it easy. Another note, if you’re using jalapeno be sure to taste it for spiciness before you use it. Like women, jalapenos can very greatly in heat from one week to another. So be careful.
